APPLE CAKE 
1 c. oil
2 c. sugar
2 eggs
2 tsp. vanilla
3 c. self-rising flour
1/2 tsp. salt
1 tsp. baking soda
1 c. nuts, chopped
3 c. chopped fresh apples

Preheat oven to 325 degrees. Grease and flour pan. Combine oil and sugar; mix. Add eggs and vanilla. Measure and sift dry ingredients. Stir in oil mixture. Add apples and nuts. Bake for 1 hour and 15 minutes. Serve with Cool Whip.
