1 c. oil
2 eggs or 3 egg whites
2 c. sugar
2 1/2 c. self-rising flour
1 tsp. cinnamon
1 c. chopped nuts (pecans)
3 c. chopped apples (I use 4 med. Granny Smith apples)
1 (16 oz.) pkg. butterscotch chips

In a large bowl combine oil, eggs, vanilla, and sugar mix well. In separate bowl, sift flour and cinnamon and add to mixture. Mix well. Stir in apples, nuts, and chips. Bake at 350 degrees for 45 to 50 minutes. Cool and cut into squares. Enjoy!
