SUGARLESS OATMEAL COOKIES 
3/4 c. vegetable shortening
1/2 c. apple juice concentrate (room temperature)
1 egg
1 tsp. vanilla
3 c. quick cooking oats, uncooked
1 c. flour
1/2 tsp. baking soda

Beat together shortening, juice concentrate, eggs, and vanilla. Add water it needed to make creamy. Add combine remaining ingredients. Mix well. Drop by rounded teaspoonfuls onto greased cookie sheet. Bake 12 to 15 minutes at 350 degrees. Add raisins or dates for variety.
