SUGARLESS OATMEAL RAISIN COOKIES 
1/2 c. raisins
2 eggs
1 cube butter
2 tsp. vanilla
1 c. flour
1/4 tsp. salt
1/4 tsp. nutmeg
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 1/2 tsp. white sweet and low
1 1/2 tsp. brown sweet and low
1 1/2 c. oatmeal
1/2 c. chopped nuts

Soak 1/2 cup raisins in water. Beat eggs with butter. Drain raisins, saving 1/4 cup water. Set aside raisins to decorate tops. Sift together flour, salt, soda, spices, and sweet and low. Mix all ingredients. Drop on cookie sheet, press raisins on top. Bake at 350 degrees 12 minutes. Cool and refrigerate. These keep weeks, or you may freeze. You may use more or less sweetener, according to your taste.
