FISH FILETS IN WINE SAUCE | |
6 (8 oz.) fish filets (redfish, cobia, snapper) 1 c. butter 2 tbsp. minced garlic 1 lg. white onion 1 bunch green onions 1 c. chopped parsley 1 1/2 c. white wine 2 lemons Flour, salt, pepper, oil Season and flour filets well. Pan fry filets until lightly brown - not well done. Remove from pan and set aside on paper towels. Remove oil from frying pan and saute all chopped seasonings and garlic in butter until tender. Add wine and stir well for 3 minutes. Remove from heat and add fish filets to sauce. Let simmer until all filets are cooked. Sprinkle with lemon juice before serving and garnish with fresh parsley. |
