SCALLOPED POTATOES AND HAM | |
2 lbs. potatoes (about 6 med.) 3 tbsp. butter 3 tbsp. flour 1 tsp. salt 1/4 tsp. pepper 2 1/2 c. milk 1 sm. onion, finely chopped (about 1/4 c.) 2 c. ham 1 tbsp. butter Boil potatoes, cut into enough thin slices to measure about 4 cups. Heat 3 tablespoons butter in saucepan over low heat until melted. Stir in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Arrange potatoes in greased 2 quart casserole. Add onion and ham. Put white sauce in. Stir all together. Dot with 1 tablespoon butter. Cover and cook at 350 degrees for 30 minutes, uncover and bake another 60 minutes. Let stand 5 to 10 minutes before serving. (Makes about 6 servings, 265 calories per serving.) |
