EGGPLANT 
1 tsp. garlic, grated
1 tsp. ginger, grated
1 1/2 tbsp. soy sauce
1 tsp. sugar
1 tsp. vinegar
1 tsp. hot pepper
1 lb. eggplant, cut in 1" long strips
2 tbsp. pork, cut into strips
Cooking oil

Sauce: Mix thoroughly the ginger, garlic, soy sauce, sugar, vinegar and hot pepper. Deep fry eggplant and pork together until the pork is well done and the eggplant is soft. Remove the eggplant and pork from the oil, draining any excess oil. Add the sauce to the eggplant and pork mixture and cook until sauce thickens.
