STUFFED EGGPLANT | |
1 eggplant, cubed, save shell 2 strips bacon 1/4 c. diced celery 2 tsp. salt 1/3 c. bread crumbs 1/4 c. minced onion 1/4 c. minced green pepper 2 c. canned tomatoes 1/2 c. grated cheese Fry bacon, save drippings. Combine onion, pepper, celery and bacon fat. Bake 3 minutes at 350 degrees, covered. Add eggplant cubes to onion mixture along with salt and tomatoes. Bake 6 minutes, covered. Thicken with bread crumbs and return to shell. Cover with cheese and crumbled bacon. Bake at 350 degrees for 15 minutes. |
