APPLE MUFFINS 
3 1/2 c. whole wheat flour
3 c. peeled, finely chopped apples
2 c. sugar or 1 c. fructose
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 1/2 c. vegetable oil
1/2 c. chopped nuts
1 tsp. vanilla

Bake at 350 degrees. Spray muffin pan with Pam. Thoroughly combine flour, apples, sugar (or fructose), salt, soda and cinnamon. Stir in oil, nuts and vanilla (batter will be stiff). Fill muffin tins 2/3 full. Bake 15-30 minutes until toothpick comes out clean.
