APPLE-OAT-BRAN MUFFINS 
2 eggs
3/4 c. non-fat milk
1/2 c. non-fat yogurt
1/4 c. frozen apple juice concentrate
1 c. regular rolled oats
1 c. oat bran
4 apples, chopped
1/2 c. raisins
1 1/2 c. whole wheat flour
1 1/2 tsp. baking soda
1 tsp. cinnamon

Combine eggs, milk, yogurt, apple juice, oats and bran. Stir to mix lightly. Stir in the apples and raisins. In a separate bowl, combine flour, soda and cinnamon. Mix this well and add dry ingredients to the fruit mixture. Spoon into non-stick muffin pans. (Use Pam if desired.) Bake at 425 degrees for 25 minutes. Yield: 12 large muffins, 100 calories per muffin.
