OAT-BRAN APPLE MUFFINS 
3/4 c. oat bran
1/2 c. whole wheat flour
1/2 c. Raisin Bran cereal
1/4 c. packed brown sugar
2 1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 egg, beaten
3/4 c. milk
3 tbsp. oil
1 apple, chopped
1/2 c. raisins
Cinnamon and sugar mixture

Preheat oven to 400 degrees. Grease 12 muffin cups or line with cupcake papers.

In a large bowl, combine oat bran, flour, cereal, brown sugar, baking powder, cinnamon, and nutmeg; make a well in center.

In a small bowl, combine egg, milk, and oil. Add to flour mixture and stir just until moistened. Batter will be lumpy. Fold in raisins and apple. Fill prepared muffin cups 2/3 full and sprinkle with cinnamon and sugar. Bake for 12 to 15 minutes. Yield: 1 dozen.
