APPLE OATMEAL MUFFINS 
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
3 tbsp. sugar
1/2 c. golden raisins
1 c. milk
4 tbsp. butter, melted
2 lg. tart apples, peeled and chopped
1/2 c. whole wheat flour
1 tsp. baking soda
1 c. rolled oats
1/4 tsp. cinnamon
2 eggs
3 tbsp. undiluted apple juice concentrate

Heat oven to 425 degrees. Generously butter 12 muffin cups. Stir together flours, baking powder and soda, salt, oats, sugar, cinnamon and raisins. Beat eggs with milk and apple juice, then beat in butter. Combine batters, then fold in apples and spoon into greased muffin cups. Bake about 30 minutes.
