APPLE OAT MUFFINS 
1 1/2 c. oat bran
1/2 c. whole wheat flour
3 tbsp. brown sugar
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 c. apple juice
1/4 c. skim milk
1 egg
2 tbsp. sunflower or olive oil
2 tbsp. honey
1 c. cooking apples, peeled, cored & diced
2 tbsp. raisins

Preheat oven to 400 degrees. Grease 12-cup muffin tin with butter. Combine oat bran, flour, brown sugar, baking powder, salt and cinnamon and set aside. In a large mixing bowl, combine apple juice, skim milk, egg, oil and honey. Add flour mixture, apples and raisins and combine until just moistened. Fill muffin tin and bake at 400 degrees about 20 minutes or until golden brown and tester comes out clean.

Makes 12 muffins. 125 total calories. 4 saturated fat calories.
