DOUG'S APPLE - RAISIN MUFFINS 
2 c. 100% bran cereal (Nabisco or Kellogg)
1 1/4 c. skim or 1/2% milk
1 c. all-purpose flour
1/3 c. dark brown sugar, firmly packed
2 tsp. baking powder
1/2 tsp. baking soda
1/4 c. (1/2 stick) melted butter
1/4 c. egg substitute (Egg Beaters or Scramblers) OR 1 egg
1/2 c. chopped apple
1/2 c. seedless raisins

Mix bran and milk in a medium bowl; let stand 5 minutes. Blend flour, sugar, baking powder, and baking soda; set aside. Mix butter and egg product into bran mixture. Stir in flour mixture just until blended. Stir in apples and raisins.

Spoon batter into 12 greased 2 1/2-inch muffin-pan cups. Bake at 400 degrees for 18-20 minutes. Serve warm. Makes 1 dozen.

This is a minor modification of a Nabisco recipe.
