HARVARD BEETS 
3 tbsp. cornstarch
1/3 c. sugar
3/4 tsp. salt
1 1/2 c. beet liquid or water
2 tbsp. vinegar
1 1/2 tbsp. butter
3 c. sliced or canned beets

Mix cornstarch, sugar and salt. Blend in beet liquid, vinegar and butter. Cook over medium heat, stirring until thick. Add beets to sauce and let stand at least 10 minutes to blend flavors.
