SUE'S HEALTHY AMERICAN CHOP SUEY | |
This is a simple and quick (30 minutes from prep to table) and you can add vegetables that your family loves, but don't need all the really bad cheeses to mask the wonderful flavor of this dish. When it is cooking... folks come running! 1 (1 lb.) box elbow, small shells or any small pasta (low-carb Dreamfield is great!) 1 lb. ground turkey or chicken 2 (10 oz. ea.) cans tomato soup (I use low-sodium) 2 cans water (use empty soup can) 1/2 cup white wine (optional) 1 medium onion, chopped finely 2 or 3 cloves garlic, chopped 2 tbsp. olive oil 1 cup Parmesan cheese, divided your choice vegetables (optional: I like peppers, chopped broccoli or spinach) Note: This recipe has great flavor. Without the vegetables it will stand on its own merit. Add a salad to complete the meal! Place olive oil in non-stick fry/sauté pan (large size). Turn on to to medium heat. Once oil is hot, put in onions and garlic. Sauté until onions soft, but do not overdo and burn onions/garlic. Put in ground turkey or chicken and cook, making sure to break up into smallest pieces possible. Make sure to get the water boiling and pasta cooking in the pot when you get to putting the meat into cook. When meat is cooked, put in both cans of the tomato soup along with two cans of water and stir. You can put in 1/2 cup of white wine to give a deeper flavor, but it is just fine without it. Continue to cook on medium heat and after about 15 minutes, add the 3/4 cup of Parmesan cheese and stir well and cook for 5 minutes. Add in the drained (non-rinsed) pasta. The sauce maybe thin, but will thicken when the pasta is added. Stir until well blended, add the remaining 1/4 cup of Parmesan cheese, cover pot and place on cool surface so the pasta continues to cook and absorb the liquid. Set the table and after about 10 minutes, your family is ready for a healthy, quick, economical and delicious meal. Great with a side salad! Don't need salty, chunky store tomato sauces, high sodium tomato soup or carb-laden pasta... your family won't even notice that its made with either turkey or chicken either! Mexican Chop Suey Variation: Add salsa and peppers - this is a recipe you can play with and it will still come out great each and every time! Easily feeds 8-10 folks with 1 cup servings. Enjoy!
