SIMPLE MUFFINS (FILLED WITH JAM) 
1 1/2 c. flour
2 1/4 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 egg, beaten
3/4 c. milk
3 tbsp. oil or melted shortening

Sift flour, baking powder, salt, and sugar in mixing bowl. Mix beaten egg, milk, and oil. Add egg mixture to dry ingredients all at once and stir quickly until everything is moistened (do not over mix batter - should be lumpy).

Fill muffin tins 1/2 to 2/3 full. Jam may be added to muffins after half filled. Bake in 350 degree oven for 20-25 minutes or until golden brown.
