GOULASH WITH GREEN PEPPERS | |
1 lb. lean boneless chuck roast, trimmed & cut into 1 1/2" cubes Vegetable cooking spray 2 med. onions, chopped 1 c. water 1 tbsp. paprika 1 tsp. beef flavored bouillon granules 1 sm. green pepper, chopped Developed for diabetics or if on low-fat, low-cholesterol diet or if you just like to eat healthy. Brown roast over medium heat in small Dutch oven coated with vegetable spray. Add onion and continue cooking over medium heat 2-3 minutes or until onion is tender. Add water, paprika, bouillon granules and green pepper, stirring well. Cover and cook on low heat 2 hours or until meat is very tender. Serve over hot cooked noodles or rice. Serving amount: 3/4 cup. Exchanges 3 lean meat and 1/2 starch (does not include rice or noodles). Cholesterol 76 mg. Calories 236. Carbohydrates 7 gm. Protein 24 gm. Fat 6 gm. Fiber 1 gm. Sodium 84 mg. |
