GRANDMA'S BUTTERMILK PANCAKES 
2 c. flour
1 tbsp. sugar
1 tsp. salt
1 tsp. baking powder
2 c. buttermilk, or more if needed
1 egg
1 tsp. baking soda (mix in a small amount water)

In a large bowl mix flour, sugar, salt, and baking powder. Stir in buttermilk, add egg and beat well. Add the soda mixed with water to the batter. Beat again. Bake on a hot greased griddle. To test griddle sprinkle with a few drops of water. If water dances the heat is just right.

I like to use bacon grease to grease the griddle when I have it. Some buttermilk is thicker than others so that is why you will need more. Remember thick batter makes thick pancakes. I like ours thinner.
