ZUCCHINI AND TOMATOES AU GRATIN 
3 tbsp. chopped onion
2 tbsp. fat
2 lb. zucchini, cut into 1/4 inch pieces
2 cans stewed tomatoes
Salt
1 tsp. pepper
1 can sliced mushrooms
3/4 c. grated Old English sharp cheese
Herb-seasoned bread crumbs

Cook onion in fat; add zucchini. Cook slowly for 5 minutes, stirring frequently. Add tomatoes, salt, pepper, mushrooms and some of the cheese. Turn into greased baking dish. Sprinkle remaining cheese and crumbs over top. Bake in 375 degree oven for 20 minutes.
