BAKED CRAB AU GRATIN 
1 med. onion, chopped
1 green pepper, chopped
1 red pepper, chopped
8 lg. mushrooms, sliced
2 lg. tomatoes, peeled, seeded and diced
1/4 c. butter
1/4 c. all-purpose flour
1 1/4 c. heavy cream
2 1/4 lbs. cooked crab meat
Salt and pepper
1/4 c. sliced almonds
2 c. grated med. Cheddar cheese

Preheat oven to 450 degrees. Saute the vegetables in butter until tender. Sprinkle with flour, stir until well blended. Add cream and simmer crab meat and season to taste. Spoon hot mixture into a greased shallow baking dish. Sprinkle with almonds and cheese. Bake in oven just until cheese is golden.
