BAKED FISH AU GRATIN 
1 1/2 lbs. fresh (or frozen) fish fillets or steaks
Salt and pepper to taste
3 tsp. oregano (or other herbs of your choice)
6 tbsp. light olive oil
1 c. bread crumbs

Preheat oven to 425 degrees F. Rinse fish under cold running water. Pat dry. Season fish with salt and pepper on both sides, if desired. Place fish in a lightly greased (or non-stick) baking dish, skin side down. Thoroughly mix oregano with oil and bread crumbs. Spread crumb mixture evenly over surface of fish.

Bake fish to 12 minutes per inch thickness until fish is just opaque throughout. Remove fish from oven and place it under the broiler for 1 minute to brown the crumb covering. Makes 4 servings.
