HOMEMADE SUMMER SAUSAGE
2 lbs. ground beef
2 tbsp. cure salt
1/2 tsp. mustard seed
1/2 tsp. garlic powder
1 tsp. sugar
1 tsp. black pepper
1/4 tsp. marjoram
1/4 tsp. sage
1 c. water

Mix thoroughly all ingredients except beef in a large bowl, so all spices will get mixed in with the beef well. Add ground beef and mix well. Form into rolls and wrap in heavy aluminum foil, tie or twist and roll ends of foil. Refrigerate for 3 days. Cook in slow boiling salted water for 1 hour. Poke holes in foil and place on drain pan so grease can drain. Cool rolls and slice as desired. May be frozen after cooked.
