MINI MINCE MEAT NUT CAKES 
1/4 c. shortening
1/3 c. dark brown sugar
3 eggs
2 1/2 c. sifted all-purpose flour
1 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 can Eagle Brand condensed milk
2 2/3 c. (20 oz. jar) mince meat
2 c. coarsely chopped walnuts

Cream butter, add eggs, mix well. Sift together dry ingredients. Add to butter alternating with condensed milk. Blend well. Stir in mince meat and walnuts. Line 1 1/2 cup cake pans with paper liners. Drop heaping teaspoon of batter in each. Bake 350, 20 to 25 minutes. Cool and decorate.

If you don't have small cup cake pans, use paper liners (triple thick) on cookie sheet.
