MINCE MEAT FRUIT CAKE 
2 1/2 c. sifted all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda

Sift these together, then combine in a large bowl mixing well:

1 (1 lb.) tin or jar mincemeat
1 c. raisins
1 c. chopped nuts
1 c. sugar
1/2 c. butter, melted
1 tsp. vanilla

Add 2 eggs, beating thoroughly. Fold in sifted dry ingredients and pour into greased tube pan that has been lined with wax paper. Bake in slow oven (325 degrees) for 1 1/2 hours.

Very good cake! Don't call it fruitcake-it doesn't have any dried candied fruit in it! Very moist and spicy. I used Crosse and Blackwell and baked it in a Bundt pan sprayed with Pam and no wax paper and it came out fine. If you like mincemeat you will love it!
