“MOLDED AVOCADO SALAD” IS IN:

MOLDED AVOCADO SALAD 
Allow 45 minutes to prepare.

1 (3 oz.) pkg. lime gelatin
1 cup boiling water
1/4 cup cold water
1 cup avocado pulp (about 2 small avocados)
2 tbsp. lemon juice
1/2 tsp. salt
1/2 cup mayonnaise
2 tbsp. finely minced or grated onion
1/4 cup chopped green pepper
3/4 cup chopped celery

Combine the gelatin and boiling water and stir until thoroughly dissolved. Stir in the cold water; set in the refrigerator to chill while preparing the rest of the ingredients. Chill 20-30 minutes until just starting to set.

Peel and seed the avocado. Add the lemon juice and salt and mash until smooth.

Stir the avocado mix, mayonnaise, onion, chopped green pepper, and celery into the partially chilled gelatin.

Pour the mixture out into a quart ring mold or into about eight individual salad molds.

Chill in the refrigerator until set.

Un-mold onto a plate.

Makes about 8 servings.
