ORANGE ROUGHEY WITH VEGETABLES 
1 lb. orange roughey
1 med. carrot, cut diagonally
1 rib celery, cut diagonally
1/2 med. green and/or red pepper, sliced
1/2 med. onion, sliced
4 to 6 tsp. butter
Dash of salt (optional)

Place cut fish into glass casserole dish. Dot with butter, top with vegetables. Cover. Place in microwave; cook 6 1/2 minutes on High (10). Let stand to steam a few minutes longer. Sprinkle fish with paprika and dried parsley. Great with baked potatoes previously baked in microwave for 7 to 10 minutes. Serves 4.

Microwave oven wattage 625 used in recipe; you may need to alter time for varied wattages.

Since microwave ovens vary in power, you may need to adjust your cooking time.
