ORANGE ROUGHY WITH VEGETABLE
BUTTER
 
1 lb. orange roughy
Salt, pepper, garlic powder, lemon juice, Parmesan cheese
1 green pepper, sliced and cored
1 purple onion, peeled and sliced
1 lb. fresh sliced mushrooms, washed and sliced
1 med. sized zucchini squash, sliced

Spray oven baking pan with nonstick spray. Bake orange roughy according to directions on package after preparing with salt, pepper, garlic, and Parmesan cheese to taste.

While fish is broiling. Prepare all vegetables. Stir fry vegetables, just until tender and crisp, adding onions last. Stir fry in butter. Add salt, pepper, garlic to taste. Place cooked fish on plate. Cover with vegetables after pouring off excess liquid first.

Delicious if served while hot with rice pilaf, baked potato, or egg noodles. White wine garnish with Kale and salad tomatoes. Serves 2 people.
