CREPES 
5 eggs
2 tbsp. sugar
1 1/2 c. flour
2 1/2 c. milk
Sour cream
Jelly
Fatback

FILLING:

24 oz. ricotta cheese with chopped fruit added

OR:

24 oz. cottage cheese (squeezed)
2 eggs
1 tbsp. butter
2 tbsp. sugar
1/3 c. raisins

Mix eggs, sugar, flour and milk. Grease frying pan with fatback; fry crepes like pancakes - only on one side.

Fill each with some of the filling, roll up and brown in frying pan (fry in butter). (Can put a little jelly in each before rolling up.) Serve with a dollop of sour cream.

Note: Can be assembled in advance, refrigerated and then fried in butter.
