MORMON GRAVY AND BISCUITS 
2 tbsp. cooking fat
3 cups milk
4 tbsp. all-purpose flour
1 cup milk
salt and pepper

Use drippings from side pork, pork chops, bacon, ham or sausage and heat with 3 cups milk. Stir flour and 1 cup milk to velvety consistency and pour slowly into the hot milk and fat, stirring until it thickens. Season with salt and pepper and pour over Mormon Biscuits or boiled potatoes with the skins on.

Mormon Biscuits:

3 cups all-purpose flour
1 tsp. salt
1 tsp. sugar
1 tsp. baking soda
3 tbsp. shortening
2 cups sour milk*

Sift dry ingredients together, cut in shortening with a knife in each hand. Add milk slowly to make a soft dough. Roll on floured board, and cut with biscuit cutter. Bake in hot (400°F) oven for 15 minutes.

Note: To make sour milk, add 2 tablespoons vinegar to 2 cups regular milk and let stand 5 minutes.
