SKILLET SCALLOPED POTATOES 
4 c. peeled, sliced raw potatoes
2 tbsp. butter
1/2 c. cut up onion
1/4 c. cut up green pepper
1/4 c. water
1 tsp. salt
4 oz. shredded process American cheese (about 1 c.)
3/4 c. Pet evaporated milk

Put potatoes, butter, onion, green pepper, water, salt and pepper in large skillet. Cover. Cook, stirring now and then, over low heat 20-25 minutes, or until potatoes are tender. Stir in cheese and evaporated milk. Cover. Cook, stirring now and then, until cheese melts and mixture thickens. Do not boil. Spoon into serving dish. Sprinkle with paprika or parsley flakes, if desired. Serves 4-6.
