SKIPPERS' SKILLET SCALLOPED
POTATOES
 
6 med. potatoes
1 med. onion, optional
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. chopped chives
1 tsp. parsley flakes
1/4 c. milk
4 tbsp. butter
6 pieces of American cheese (or cheese of choice)

Heat 8x10-inch skillet on medium high heat. Peel potatoes. Cut potatoes and onion into 1/2-inch slices. Fill skillet with water; add salt and pepper. Cook potatoes 10-15 minutes or until tender. Drain water off. Add 1/2 teaspoon of chives and 1 teaspoon of parsley flakes. Add milk and butter. Cover potatoes with cheese. Put skillet in oven on broil to desired brownness (3-5 minutes).
