SZECHWAN STYLE CHICKEN AND
BROCCOLI
 
2 chicken breasts, boned and skinned
1/2 c. picante sauce
2 tbsp. soy sauce
1 tbsp. water
1 tbsp. cornstarch
1/2 tsp. sugar
3 tbsp. vegetable oil
1 med. onion, cut in wedges
2 cloves garlic
1/2 tsp. ginger
1/2 c. broccoli flowerettes
1 med. red or green pepper

Cut chicken into 1 inch cubes. Combine picante sauce, soy sauce, water, cornstarch and sugar in bowl; set aside. Heat 2 tablespoon oil in skillet, medium high heat. Add chicken stir fry 3 to 4 minutes. Remove. Add remaining oil, onion, garlic, ginger to skillet. Stir fry for 30 seconds. Add broccoli and peppers and stir fry for 3 minutes. Stir Picante sauce mixture to blend ingredients then add chicken and picante sauce to skillet, stir about 1 minute or until thickened. Serve with rice.
