HOT CHICKEN AND BROCCOLI 
2 tsp. cooking oil
1 tbsp. garlic, minced
8 oz. skinless boneless chicken breast, cut into 1/4 strips
8 oz. broccoli florets, cut in bite-size pieces
3/4 c. dry vermouth
2 tsp. soy sauce
1/4 tsp. hot red pepper flakes
2 tbsp. minced ginger
Freshly ground pepper to taste
1/8 tsp. salt (optional)

Stir fry the garlic in hot oil in non-stick pan for about 30 seconds. Add chicken and stir fry until chicken begins to turn golden on both sides. Add broccoli and stir to coat.

Add vermouth, soy, ginger, pepper flakes and salt; cover and cook about 6 minutes until broccoli is tender. Serve over rice.
