SCALLOP POTATOES (Boulanger) | |
5 chef potatoes 2 tbsp. oil 1/4 to 1/2 lb. bacon (chopped) 1/4 c. chopped onions 1/2 c. chicken stock Slice chef potatoes medium thick. In frying pan, heat oil. Add bacon and onion and fry lightly. Place sliced potatoes in oven proof pan. Pour in a little oil to keep from sticking. Pour vegetable and bacon mixture with chicken stock over potatoes and bake 40-45 minutes at 400 degrees. |
