PANCAKES 
1 1/4 c. soy milk or 1 c. water
1 or 2 beaten eggs (optional)
1 tsp. vanilla extract
1 1/2 c. flour (whole wheat, buckwheat, barley, oat or other)
2 tsp. non-aluminum baking powder
Pinch sea salt

Beat liquid ingredients together. Sift dry ingredients together. Add liquid ingredients to dry. Stir until evenly moistened. Spoon, one tablespoon at a time, onto a heated, oiled griddle or skillet. Fry on a low flame until edges become golden. Flip and continue to fry until spongy. Yield: 16-20 silver- dollar-size pancakes.
