CREAMY RICE PUDDING 
4 eggs
3/4 c. sugar
2 c. milk
1 1/3 c. cooked rice
1 1/2 tsp. lemon juice
1 1/2 tsp. vanilla extract
1 tbsp. melted butter
1 tsp. ground nutmeg, optional
2/3 c. raisins

Combine eggs, sugar and milk. Beat on medium speed of mixer, two minutes until sugar dissolves. Add rest of ingredients. Stir well. Pour into 1 1/2 quart baking dish. Place dish in baking pan containing 1 inch of boiling water.

Bake uncovered 350 degrees for 40-45 minutes until mixture is a little thick. Stir mixture and finish baking an additional 15 minutes or until set. Serve warm. Serves 6.
