CREAMY RICE PUDDING 
1/2 c. long grain rice
2 eggs
1 tsp. vanilla
1 qt. milk
1/2 c. sugar
Raisins, optional

Cook rice in 2 cups of water. All water should be absorbed. Add 3 cups of milk on low heat, stirring occasionally. When slightly thickened, add 1 cup milk, 2 eggs, 1/2 cup sugar and 1 teaspoon vanilla, beaten together. Add mixture to cooked rice. Stir until thickened and add raisins, if desired. Pour into bowl and sprinkle top with cinnamon. Serves 8-10.
