OVEN BAKED CHICKEN SALAD 
2 whole fryer chickens
1 small onion, chopped fine
1/2 tsp. salt
1 c. cheddar cheese, grated
4 c. celery, chopped fine
1 c. mayonnaise
1 can cream of mushroom soup
2 c. potato chips, crushed
juice of 2 lemons

Cook chickens in water with celery, onion, salt and a sprinkling of pepper, until it can be removed from the bone. Mix boned chicken, mayonnaise, soup, salt and lemon juice. Place in buttered baking dish. Cover with crushed potato chips, cheese and nuts in above order. Bake at 375°F for 40 minutes or until brown and cheese is melted.

Serves 8.
