CUCUMBERS IN SOUR CREAM 
3 cucumbers (about 10 oz. each)
2 1/2 tsp. salt
1 c. dairy sour cream
2 green onions with tops, thinly sliced
2 tbsp. drained capers
1 1/2 tsp. snipped fresh dill
1 tsp. sugar
1/2 tsp. pepper
1/2 tsp. snipped fresh dill, if desired

Pare thin lengthwise strips from cucumbers at 1/2 inch intervals. Cut cucumbers crosswise into thin slices. Sprinkle with salt; let stand 1 hour. Drain; pat dry on paper toweling. Combine sour cream, green onions, capers, 1 1/2 teaspoons dill, the sugar and pepper. Toss cucumbers with sour cream mixture. Refrigerate covered 1 hour. Garnish with 1/2 teaspoon dill.
