ITALIAN CREAM CAKE | |
1 box white cake mix 3 eggs, separated 1/2 tsp. baking soda, dissolved in 1 c. buttermilk 1 stick butter 1 tsp. vanilla 1 c. flaked coconut 1/2 c. chopped pecans Mix cake mix, egg yolks, butter, buttermilk with soda, vanilla and coconut with electric mixer. Fold in pecans, then add 3 egg whites stiffly beaten. Bake in 13x9x2 inch baking pan or 3 - 9 inch cake pans. Frost with Cream Cheese Frosting. CREAM CHEESE FROSTING: 1 (8 oz.) pkg. cream cheese 1 stick butter 1 tsp. vanilla 1 box powdered sugar 1/2 c. chopped pecans Combine cream cheese, butter, sugar and vanilla. Cream together and then add pecans. |
