GRANDMA'S ITALIAN CHEESECAKE 
3 lbs. ricotta cheese
6 eggs + 6 "egg beaters" (or 12 eggs)
1 lemon rind & the juice of that lemon
2 c. sugar
3 tsp. vanilla
1 c. milk

Mix all ingredients in a large bowl. Pour into a 12 x 10 inch lasagna-type pan. Bake at 350 degrees for 1 1/2 hours and golden brown.

I have made this cheesecake several times and it is very easy and DELICIOUS! I usually do two pounds of ricotta and 1 block of cream cheese to make it a little smoother. I also put everything in the blender for easy prep and clean. I have also used orange instead of lemon and it's good too.
