ENCHILADA CASSEROLE 
2 lbs. ground beef
1 lg. bag Fritos corn chips
2 (14 oz.) cans enchilada sauce
1 Brick Cheddar cheese, grated
1 chopped onion (optional)

Brown ground beef and drain off fat. Stir in both cans of enchilada sauce and 1/2 can water. In 9 x 13 inch oblong pan, layer meat sauce, Fritos, cheese, onion, meat sauce, Fritos cheese, and onion. End up with last of meat sauce on top. Heat in 350 degree oven for about 20 minutes or until cheese is melted and bubbly.
