EASY ROLLS 
2 yeast cakes
1 tsp. sugar
1/3 c. shortening
2 tbsp. sugar
1 c. milk, scalded
1/4 c. lukewarm water
4 c. flour
2 tsp. salt
3/4 c. water

Crumble yeast into small bowl. Add lukewarm water and 1 teaspoon sugar, set in warm place until light and spongy (about 15 minutes).

Combine shortening, salt and 2 tablespoons sugar in large bowl, add scalded milk and water. Stir until shortening is melted and cool to lukewarm. Add this to yeast mixture. Add flour gradually mixing well.

Cover and let rise for about 1 hour or until double in bulk. Punch down and let rise again, until very light, about 1/2 hour. Shape into rolls, let rise until light about 15 minutes. Bake in hot oven 450 degrees for 15 minutes. Makes 2 dozen rolls.
