TOFU MOCK EGG SALAD 
(High in protein, low in sugar, low cholesterol).

1 1/2 c. tofu, chopped or mashed with fork
1/4 c. chopped onion
1/2 c. chopped sweet pickles or 1/3 c. sweet pickle relish, well drained

DRESSING:

1 c. plain yogurt
1/2 c. Miracle Whip
1 tbsp. Gray Poupon mustard
1 1/2 tsp. Sweet & Low sweetener
Salt, pepper, garlic to taste

(Non diabetics sweeten to taste with sugar).
