TOFU SALAD 
1 lb. tofu (mashed with the back of a fork)
1/4 c. tahini
1/2 grated apple
1 grated carrot
3 tbsp. olive oil
1 tbsp. tamari (soy sauce)
1 tbsp. chopped red onion or scallions
Pepper to taste

Mix all ingredients together. Serve as a sandwich spread or with crackers.
