TOFU POTATO SALAD 
2 c. cooked cut up potatoes
2 tbsp. olive oil
1 tbsp. vinegar
1/2 tsp. salt
1/8 tsp. black pepper
1/8 tsp. dry mustard
1 c. minced onion
1 c. diced celery
2 tbsp. minced parsley
Celery salt to taste
8 oz. mashed tofu

Toss potatoes with oil, vinegar, salt, pepper, and mustard. Let cool. Add to the cooled potatoes, onions, celery, parsley and celery salt. Blend tofu in blender until smooth and creamy. Mix in potato mixture, chill and serve.
