BLACKENED STEAK BORDELAISE | |
4 beef filets, room temperature (1/2 inch thick) 3/4 stick butter, softened Prudhommes blackened steak magic 3/4 stick butter 1 tsp. lemon juice 1 1/2 tbsp. fresh parsley, chopped 1 tsp. garlic, chopped Heavy black iron skillet First, rub blackened steak magic generously all over steaks, then smear butter all over steaks and steak magic. Let sit for about 15 to 30 minutes. Heat heavy black skillet until very hot. (DO NOT DO THIS INSIDE BECAUSE IT CREATES PLENTY SMOKE - DO OUTSIDE ON A PROPANE BURNER). In microwave, place 3/4 stick butter, parsley, lemon and garlic. Heat on high for two minutes only. Let stand. Place steaks in very hot skillet and allow to blacken for approximately 2 to 3 minutes then turn over and drizzle small amount of butter on steaks and blacken for another 2 to 3 minutes. After that turn steaks a few times for one more minute. Drizzle butter on steaks as you turn. Remove steaks onto platter and cover with sauce and lick your lips. 2 minutes will be medium rare. 3 minutes will be more medium. |
