HUNGARIAN GULYAS | |
1 lg. minced onion 1 tbsp. lard 1 tbsp. hot paprika 2 lbs. mutton bones 3 lbs. stewing mutton 1 tbsp. salt 1/4 tsp. caraway seeds 2 crushed garlic cloves 5 med. potatoes, peeled, diced 2 green peppers, med., diced 2 ripe tomatoes, med., diced Little dumplings Brown onion in heavy kettle. Remove from heat and stir in paprika. Immediately add 1/2 cup water. Put back on heat, add bones and stewing meat. sprinkle with salt, caraway seeds and garlic. Cook, covered, over low heat for about 2 hours. Add diced potatoes, green peppers and tomatoes and another 1/2 cup water. Cook until done. Make little dumplings and put them into the soup for 5 minutes. |
