HUNGARIAN BEEF GOULASH 
2 to 3 lg. onions
1 to 1 1/2 lb. beef cubes
1 1/2 to 2 tbsp. paprika (Sweet Hungarian, preferred)
2 tbsp. oil or Crisco
1/2 to 1 tsp. salt
1/8 to 1/4 tsp. cayenne pepper
1/4 c. water
4 med. potatoes, pared, quartered

Saute thinly sectioned onions in oil lightly. Stir to avoid burning. Add beef, paprika, salt and water to prevent scorching. Cover tightly, stew gently 1/2 hour or until beef is tender. Add potatoes, cover, stew until beef is tender and potatoes are cooked. Add hot cayenne pepper to taste. Add more salt to taste, if needed.
